Staying fit and keeping to a healthy diet can feel like a big challenge and can also be quite boring and monotonous. However, being health does not mean bland, tasteless meals. Here are a few quick, easy, healthy dinner recipes that you are sure to put a spring in your step.
An Oven Baked Salmon.
This is probably the simplest dish you can ever make. Simply season your salmon with pepper and salt, then put it in the oven for about 15 minutes. This ensures it is baked to perfection. Once this is done, garnish with an equally easy to almond and parsley salsa and serve.
Alternatively, you can marinade you salmon with lemon before popping it into the oven, then topped off with a fruit salad and served with a rice.
Stir Fried beef with Avocado salad.
This is one of the easy 30 minute healthy dinner recipes that requires; a quarter cup of freshly squeezed lime juice, 12 ounces of thin strips of beef tenderloins, 1 medium sized onion, a thinly sliced red bell pepper, a thinly sliced Poblano, 1 tablespoon of vegetable oil, A tablespoon chilli powder and A teaspoon of salt and black pepper each, a can of rinsed and drained black beans, one full avocado diced, a quarter cup of crumbled Cojita cheese and 1/4 cup of cilantro to garnish.
Mix the beef, lime juice and chilli powder and leave to mix for a few minutes. In a large skillet, heat the oil and then add the onions, Poblano and bell pepper and saute while stirring occasionally for about 5 minutes. Add the beef and marinade to the vegetables and cook for about 4 minutes. Season with pepper and salt.
In separate bowl, mix the beans, cheese, cilantro, avocado and any remaining chilli pepper and lime juice. Serve the beef with the avocado salad and warm tortillas if you so desire. The best part about this meal is that it only contains about 30 g of carbohydrates, 436 calories, 28 g protein, 26 g fat 7 of which is saturated fat and 10 g of fiber.
Slow-Cooker Pork Tacos
Leave the meat in a slow cooker before you go out for the day and you will come back to a flavourful, tender pork tacos. You can serve this with a mango salad, and some sliced onions and parsley to garnish. If you are impatient and don’t want to wait, you can prepare the recipe in a Dutch oven in almost half the time.
You can also try making any of your normal favourite dishes and spice them up by using different ingredients and adding more herbs to create a different culinary experience.
